Wild Turkey with Brown Butter Sage Sauce
Ingredients:
- Wild Turkey Breast
- Honey
- Dijon Mustard
- Jeff's Cooking Chrystals
- Olive Oil
Sauce Ingredients:
- Butter
- Shallots (or red onion)
- Pecans
- Fresh Sage
- Chicken Stock
- Cracked Pepper
Take turkey breast and slice into filets (Cut on a bias).
Place turkey filets into a pan or dish to add marinade.
Smear Dijon mustard on cutlets. Sprinkle with Jeff's Cooking Chrystals and then pour the honey over top. Mix all ingredients together to make sure that the turkey filets are evenly coated.
Drizzle some olive oil over top and let marinate for a ½ hour or more.
While turkey is marinating start preparing sauce below.
Take chopped pecans, julienned shallots, fresh sage.
Add butter to sauté pan. Add shallots. After a few minutes add pecans and torn up sage leaves.
Move ingredients to top of sauté pan and add a touch more butter in the middle of the pan.
Once butter starts to brown add a splash of chicken stock and stir up sauce. Add cracked pepper to taste to finish sauce.
Take marinated turkey filets and sear on a hot grill until nice and crispy on both sides.
Pour sauce on serving plate first and add turkey filets on top. Garnish with fresh sage and enjoy! |
