Sauté Walleye with Basil Cream
Ingredients:
- 1lb Walleye
- 1 Red Pepper
- 6 Leaves Basil
- 1 Shallots
- 2 tbls of butter
- Flour
- Sherry Wine
- 1 cup Cream
- ½ cup Chicken stock
- Pinch of Jeff's Cooking Chrystals
- Pinch of chopped garlic
Add butter to pan and sauté shallots until soft and translucent.
Next add fresh pepper for quick minute.
Add flour to fish. Leave excess flour on fish.
Add fish to sauté pan and let brown. Turn fish and brown both sides.
Add pinch of garlic and sherry wine. Let sherry wine reduce and cook down. Then add chicken stock.
Chop and add fresh basil. Add cream. Add a pinch of Jeff's Cooking Chrystals.
Shake gently.
Serve skin side of fish in the bottom of the plate. Enjoy!
